The Chemistry of the Stretch

To understand why it takes years to learn how to stretch dough, one must understand the volatile nature of gluten.

Wheat flour, when mixed with water, forms gluten networks—complex protein structures that provide dough with its elasticity. In Western baking, yeast and long resting periods are used to relax these proteins. In Lanzhou noodle making, chefs must achieve an extraordinary level of extensibility almost instantly.
